Notes: It is the sauce that makes this dish. I lowered the salt content by switching from regular soy sauce to light soy sauce and did not add salt to the egg mixture. I figure, if you want more you can add it, but you can't take it out.<br />
<br />
<b>Ingredients</b><br />
<br />
1 pound tofu, mashed<br />
4 each eggs<br />
1/4 teaspoon ground black pepper<br />
6 each green onions, finely chopped<br />
1 tablespoon all-purpose flour<br />
1 tablespoon arrowroot powder, or cornstarch<br />
<br />
<b>Sauce</b><br />
1 tablespoon olive oil<br />
1 each small onion, chopped very fine<br />
2 cloves garlic, minced fine<br />
1 each ripe tomato, finely chopped<br />
2 tablespoons light soy sauce<br />
2 tablespoons water<br />
1 tablespoon sugar<br />
<br />
<b>Directions</b><br />
<br />
Mix the mashed tofu, eggs, black pepper, green onions, arrowroot (or cornstarch) powder and flour.<br />
<br />
Heat the oil in a small sauce pan. Add the onions and garlic. Gently fry until onions are soft (about 5 min).  Add the chopped tomato and fry, stirring, for 3 or 4 minutes, or until the tomato is cooked to a pulp. Add soy sauce, water and sugar. Bring to a boil, then set aside.<br />
<br />
Heat a frying pan with a little oil, add a small scoop of the egg mixture and fry it. Turn it over as best you can (there's no helping it, it will break up, but do the best you can).  When cooked on both sides, slide it on to a plate, spoon a little of the sauce on it, sprinkle some extra green onion on top (if you want) and serve.<br />
<br />
I have found that making the &quot;omelet&quot; about 3 inches across (sort of like a pancake) works best.</div>

				How to Help a Friend/Co-Worker/Relative Get Started Exercising <br />

Now's a great time to help someone get into a fitness habit.  Both of you will benefit.  Not only will you help him/her to manage attitude, improve vitality, release stress and think more clearly but studies show that helping others bestows a boost to the immune system. Even if the exerciser doesn't lose an ounce, there is an enhancement to the spirit that improves the quality of life for both of you.<br />
<br />
When tense, stressed or un-motivated family members or co-workers exercise, they tend to be more positive and more humane afterward. Do you want your kids to do their best in school? Studies show that kids who exercise regularly do better in school and in life. Here are a few tips have helped to improve motivation and success.<br />
<br />
Your motivation to exercise increases when you serve as a role model. You'll also inspire yourself to learn more about fitness. Adults who serve as an exercise mentor find that they study and learn the principles of training better as they explain them to others.<br />
<br />
1. Get them a good textbook. My books Walking, Running Getting Started, &amp; Galloway's Book on Running offer training schedules with support information. You can read more about these at JeffGalloway.com.<br />
<br />
2. Start with a little exercise, and gradually increase. Children will often do a lot more than they should at first, then get sore and discouraged. Hold them back and they can be successful in every workout!<br />
<br />
3. Make each session enjoyable - especially during the first month.  If your coachee is huffing and puffing, slow the pace, walk more slowly, and make other adjustments from the beginning of every exercise session. If there is any sign of struggle, then stop for that day. Never push through pain.<br />
<br />
4. Low Blood Sugar. Before a workout, if you suspect that your friend is experiencing low blood sugar, have pieces of an energy bar with water, diet drink, or coffee about 30-45 minutes before the start. Provide a reward after each session - especially a snack to reload the energy stores. The best nutritional formula for a booster snack is 80% carbohydrate and 20% protein. The Accelerade and Endurox R4 drinks have this in the mix. <br />
<br />
5. Find interesting areas where you can exercise - scenic areas, interesting exercise club, etc. Convenient walking routes near office or home, or a nearby gym can lead to more exercise sessions a year. But once a week or so, an excursion to an interesting area or fun health club venue can be very rewarding. It's great to have variety, and you should give your coachee some choice.<br />
<br />
6. On each exercise session, tell a joke, a juicy story or a controversial issue. This will break the ice, inject some humor, and result in a positive bonding experience. With beginners (adults or kids) who are struggling with motivation, the humorous moments provide a series of positive reinforcements.<br />
<br />
7. Structure each session so that there is success. Don't let the new exerciser do too much - especially during the first few sessions. If walking or running, take liberal rest breaks before you hear the huffing and puffing. If in a gym, move to another exercise before there is fatigue, or heavy breathing.<br />
<br />
8. Don't push too hard, but encourage, and reinforce a good attitude. One of the most difficult decisions in coaching is whether to push or back off - whether to use a pat on the back or a kick in the butt. In general, it is important that the person exercise regularly. When motivation is down, reduce the intensity to reduce discomfort - and produce success. The ultimate victory is realized when the new exerciser wants to do it.<br />
<br />
9. Rewards Work! After a certain number of weeks, or after reaching a certain level of fitness, surprise the coachee with a reward. It doesn't have to be something expensive or exotic. The reward allows the new exerciser to focus on his or her progress, and enjoy the satisfaction that comes from steady exercise.<br />
<br />
10. Tell him or her about your mistakes. Most people learn more from a personal story that has a lesson, than a lecture on the same topic.<br />
<br />
11. Don't over-sell exercise. The benefits are so powerful that almost everyone who stays with it for 6 months, will continue. Walking or running with the new athlete on the tough days, and congratulating him/her for the dedication--are powerful reinforcers. But if your coachee is falling asleep during your one hour speech on the benefits, you know that you've stepped over the line.<br />
<br />
Your greatest reward will be an independent fit person. Take it as a real compliment that your coachee will need less and less of your guidance. This means that you were an excellent coach, and that he or she can find another person to coach. Another life can be enriched.

Clean the brussel sprouts by slicing off the bottoms and removing any discolored leaves, if there are any.  Preheat the broiler.<br />
<br />
IF they are large you may want to cut them in half, I like them whole but sometimes they are too large for that.  When you have the choice, choose the smaller ones, more tasty!<br />
<br />
Steam them till tender.<br />
<br />
After they are steamed I toss them with olive oil, enough to cover them, tamari, and sesame seeds, as much as you like.  I use, I don't measure, a visual gauge. Sometimes I will add powdered garlic, this is optional.<br />
<br />
I then broil them, constantly watching them so they do not burn and tossing them so all sides are exposed to the fire.  Some of the leaves might char but you want a browned look to them.<br />
<br />
Done!  They are great at room temperature and I have had people who are not fans of brussel sprouts just love them!<br />

			<content:encoded><![CDATA[<div>For those who grow them, this is the time of year to start drying the herbs, if you haven't been doing so already. I have lavender, sage, oregano, mint, and chamomile drying. I thought it might be great to have a thread devoted to giving tips by different people regarding how people have gone about the drying and storage of the herbs.<br />

For me, I dry them on window screen, blocked up for airflow, inside and out of the direct sunshine. First, I remove the leaves and put them in a single layer on the screen. I check them every few days, until a leaf will crumble easily. Then I give it three extra days.<br />
<br />
The herbs are then put in air tight jars (empty baby food jars are ideal), labeled, capped, then put in a cool dry place. Light and moisture do a number on herbs. In the first case, light quickly robs them of flavor and aroma, and in the second, they can mold easily.<br />
